Maple pecan french toast
Ingredients
- Gluten-free bread of choice, cut into thick slices
- 3 medium eggs
- 180ml milk (almond or oat milk works fine too)
- 50ml of maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
- Pinch of salt
- 100g Just Live a Little Maple & Pecan Granola
- 1 tbsp almond flour
- 1 tbsp coconut oil, melted
- 50g of pecan nuts

Method
- Grease a baking pan and layer the bread pieces across the dish
- Whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon and salt and pour over the bread, so it is evenly coated. Cover and chill for at least 1 hour.
- Mix together the granola, almond flour and coconut oil. Remove bread from the refrigerator and sprinkle granola on top. Top with pecan nuts.
- Preheat oven to 180°C fan. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
- Cool slightly before drizzling with a little more maple syrup.
